buttoned-up reds
Fermented for nine days on the skins then pressed into a stainless tank for one week then gravity fed into French neutral oak
not simply in spite of the death
This is not your smoldering bonfire monster a la Laphroaig but a slow-burn: haunting
Wild-gathered
Bourre Pif "Syrahk47" VdF 2022 Style:Red buttoned-up redsNegoce Syrah from the Roussillon, fermented and aged in Alsace. 3 weeks maceration, aged in fiberglass tank. Crunchy and lifted, it feels like a classic expression of Syrah with just a little extra energy. Tapenade, bacon fat, and cranberry notes. Zero sulfur but not funky, just super tasty.
