In the 1950's they were the first to age Shochu in oak barrels to create their famous 'mellowed shochu' which tastes very much like a light single grain whisky. A key feature of Kanosuke is the use of these shochu casks in the maturation of their single malt innovating to create interesting flavour profiles from young whiskies. With more time Kanosuke can take a more
